FOURTEEN - KARAT - CAKE | |
2 c. flour 2 tsp. baking powder 1 1/2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 2 c. sugar 1 1/2 oil 4 eggs 1 can crushed pineapple, drained 2 c. grated carrots 1/2 c. chopped nuts 3 1/2 oz. pkg. coconut Sift together flour, baking powder, baking soda, salt, and cinnamon. Add sugar, oil, eggs, and mix well. Add carrots, pineapple, nuts, and coconut. Bake in a greased and floured 9 x 13 inch pan for 40 minutes. Cool a few minutes before removing from pan. Then frost. Cream Cheese Frosting: Cream 1/2 cup butter, 8 ounce package cream cheese, and 1 teaspoon vanilla. Beat in 1 pound sifted powdered sugar. If too thick, add milk; if too thin, add more sugar. |
