STUFFED CABBAGE | |
1 lg. head cabbage 1 lb. ground beef 1/2 lb. ground pork 2 tsp. salt 1 onion, diced 1 egg 1/2 lb. uncooked rice 1/2 sm. can sauerkraut 1 sm. can tomato juice 1 can water Core cabbage and steam in pot of boiling salted water until softened. Cut off any hard outer parts. Season meat with salt and pepper and mix together with onion, egg and rice. Place a scant handful of mixture on each cabbage leaf. Roll up and tuck in ends securely. Line bottom of cooking pot with sauerkraut. Place cabbage rolls in layers. Put remaining sauerkraut on top. Mix tomato juice and water and boil. Then pour over cabbage rolls. Boil, covered, on medium heat for 2 1/2 hours. |
