7 lbs. cucumbers 2 c. lime 1 c. salt (pickling) 3 tsp. alum 2 qts. vinegar 5 lbs. sugar Slice thin and let soak overnight in lime water. Stir and let stand overnight. Next morning, put in clear water and let stand 4 hours with 1 cup of pickling salt. After 4 hours, put cucumbers in clear water. Let stand 2 hours. Take out and put in water with 3 teaspoons alum. Bring to boil, then scald in hot water. Drain off water; mix 2 quarts vinegar, 5 pounds sugar, and 1/3 box spices. Tie spices in a white cloth and boil. Add cucumber to this mixture and let boil 30 minutes. Place in hot jar. |
