BRAISED RED CABBAGE AND APPLES 
1/4 c. olive oil
2 med. onions, cut in half then thinly sliced
2 med. apples, peeled, cored and thinly sliced
1 med. red cabbage, shredded (approx. 8 c.)
1/2 tsp. salt
1/2 c. sweet red wine
1/2 c. red wine vinegar
Parsley, minced, for garnish

Heat oil in a large pot over medium heat. Add onions and apples. Toss to coat with oil and cook for 5 minutes. Add cabbage, salt, vinegar and wine, toss again. Reduce heat and simmer, covered, for 50-60 minutes, tossing occasionally. Garnish with parsley when serving. Serves 6.
