BRAISED RED CABBAGE
1 tbsp. butter
1 lg. onion, chopped
1 1/4 lg. red cabbage (1 sm. head, cored and sliced thinly)
1 golden delicious apple, peeled, quartered, cored and thinly slice
1/2 tsp. salt, if desired
1/8 tsp. black pepper
1 tbsp. dark brown sugar
1 c. warm water
1 tbsp. red wine vinegar

Melt the butter in a large skillet, add the onion and saute for 1 minute. Add the cabbage and apple, and cook stirring occasionally, for another 5 minutes.

Meanwhile, combine the salt, pepper, brown sugar, water, and vinegar. Add this mixture to the sauteed cabbage mixture, and cook, covered, over low heat for 30 minutes. Serve the cabbage hot or cold.

This works great. I'd like to suggest the addition of a few ounces of fresh cranberries to the 2nd mixture. It gives the dish a more interesting scent/flavor.
