VEGETABLE MEAT LOAF 
1 c. oats (Mother's or Quick Oats)
1 sm. onion, minced or 1 tbsp. instant onion
1/2 tsp. each of salt & pepper
1/2 c. hot low sodium beef broth or water
2 egg whites or 1 whole egg
1 lb. ground beef
1 1/2 c. chopped or shredded vegetables

Carrots, celery, also broccoli can be added. In addition, mushrooms can be added.

In a large bowl, stir oats, onion, salt, pepper and broth or water. Let stand 5 minutes or until oats swell slightly. Add egg, beef and vegetables. Mix well.

In a small roaster or greased shallow baking dish or pan, shape loaf. Bake in a preheated 350 degree oven 1 hour or until done.
