BACON-TOMATO-HERRING SANDWICH 
Blend 1 cup large or small curd cottage cheese with 1 1/2 teaspoon prepared horseradish (or to taste). Split and toast 2 plain or whole wheat English muffins.

For each sandwich, spread an equal amount of cottage cheese mixture on each muffin half and top with 1-2 thin slices of tomato. Divide 1 (8 ounce) can Kippered herring fillets evenly among muffins and cover each with a strip of crisply cooked an drained bacon. Garnish with lettuce leaves. Makes 4 sandwiches.
