CANADIAN - BACON STACKS 
1 lb. Canadian bacon slices, 1/4" thick (12 slices)
6 Cheddar or Longhorn slices
3 corn cakes, split & toasted
6 thin onion slices
6 thin tomato slices

In skillet, cook bacon on both sides. On each bacon slice place a cheese slice; top with remaining bacon slices. Return meat and cheese stacks to skillet and melt cheese. Serve on corn cakes topped with onion and tomato.
