CANADIAN BACON IN WINE SAUCE 
1 lb. sliced Canadian bacon
1 1/2 tbsp. oil
1 1/2 tbsp. flour
1 (10 1/2 oz.) can beef broth
Pinch of thyme
Pinch of dried basil
2 tbsp. sherry

Cook the Canadian bacon in a skillet for 5 minutes, turning often. Remove to a heated platter. Discard the drippings.

Heat oil in a saucepan; blend in the flour and brown it slowly. Add the broth, stirring to keep smooth. Add the thyme and basil, simmer for 15 minutes over low flame. Strain the sauce, add sherry, heat through and pour over the bacon slices. Serves 4.
