SPINACH QUICHE 
4 c. cooked brown rice
1/3 c. melted butter

Pour over rice.

1 (10 oz.) pkg. frozen spinach, thawed
1/4 c. chopped green onion
3 or 4 well beaten eggs
2 c. Velveeta shredded cheese
1/4 tsp. Tabasco sauce

Mix all ingredients and pour into a large lightly greased casserole dish. Bake at 325 degrees for 45 minutes. Let cool before cutting.
