CANDY (FONDANT) 
1 pound confectioners' sugar
1/4 cup cocoa
about 2 tbsp. butter
1/2 cup light corn syrup
1 teaspoon vanilla extract

Sift sugar and cocoa together, then set aside. Combine 1/2 of sugar mixture, butter, and corn syrup in a heavy saucepan. Cook over low heat until mixture comes to a full boil, stirring constantly. Quickly stir in remaining sugar mixture and vanilla extract, then remove.

Cooks Note: If you want to, you can roll these in confectioners' sugar immediately after rolling.
