CARROTS WITH HORSERADISH SAUCE 
1 lb. carrots
1 c. water
Salt and pepper to taste
1/2 c. mayonnaise
1 tbsp. minced onion
1 tbsp. horseradish
1/4 c. Ritz crackers
2 tbsp. melted butter

Clean and slice carrots; cook in 1 cup of water with salt and pepper to taste. Reserve half of liquid from carrots.

Mix mayonnaise, onion and horseradish with the carrot liquid. Add and blend to cooked carrots. Place in casserole, top with the cracker-butter mixture and brown in oven.
