BEEF WITH BROCCOLI 
2 bunches broccoli, cut into 1 1/2 inch pieces
1/2 c. onions, sliced into rings
1 to 1 1/2 beef, cut into strips
2 1/2 tbsp. soy sauce
1 tsp. ginger
2 tbsp. vegetable oil
1 tbsp. cornstarch
1/4 c. water

In a large frying pan or wok, heat oil over medium heat until hot. Add onions and saute until golden brown. Add beef strips and quickly stir-fry until done. Sprinkle with ginger. Add broccoli, stirring to mix well. Cover and steam 2 or 3 minutes, until broccoli is tender crisp and bright green. Remove cover; stir in soy sauce. Add cornstarch mixed with water to thicken sauce. Stir and cook another minute. Add salt and pepper to taste. Yields 4 servings.
