PINEAPPLE CHEESE CASSEROLE 
2 (16 oz.) cans chunk pineapple, drained
1 1/2 c. granulated sugar
3/4 c. all-purpose flour
2 c. grated sharp Cheddar cheese
1 stack Ritz crackers
2 sticks butter

Preheat oven to 350 degrees. Spread pineapple in 2 quart casserole. Mix together sugar, flour and grated cheese. Add to casserole, mixing into pineapple. Crush crackers and spread them over the top of pineapple - cheese mixture. Melt butter and pour over crackers. Bake 30 minutes. Serve hot or cold. Delicious served as a side dish with ham.
