GREEN PEPPER & CHEESE CASSEROLE 
3 med. peppers
1 sm. Velveeta cheese
8 to 12 saltines, crushed (or Club)
1/2 stick butter
2 eggs

Boil cut-up peppers until tender. Save juice.

In buttered casserole, layer with peppers, cheese, butter and cracker crumbs (repeat). Beat 2 eggs with 1/2 cup pepper juice. Pour egg mixture over pepper layers.

Cook, uncovered, at 375 degrees for 30 to 45 minutes until browned.
