MOTHER'S BUTTERMILK BISCUITS | |
1 tbsp. baking powder 1 tsp. salt 1 c. flour A little less than 1/3 c. shortening Enough buttermilk to moisten, but not make sloppy Melt shortening in metal baking pan in 400 degree oven. Mix dry ingredients, 1 tablespoon warm shortening and buttermilk to moisten. Work dough on board dusted with flour and a little extra baking powder until it feels elastic. Roll to about 1/2 inch thickness and "crowd" them into the pan. Let rest for about an hour to raise (slightly). Bake in a 400 degree oven for about 15 minutes or until golden. Put a piece of wax paper loosely on top after removing from oven to retain moisture. (These are worth the effort and will not last, particularly if you serve with honey and butter or homemade chicken gravy!) |
