WHOLE WHEAT MUFFINS 
2 c. whole wheat flour
1/4 c. oil
1 tsp. baking powder
1 tsp. baking soda
1 1/2 c. buttermilk
1 egg
1/4 c. sugar
1/2 c. raisins (optional)

Mix flour, baking powder, baking soda and sugar together. Add mixture of milk, egg and oil. Mix only long enough to moisten dry ingredients. Bake at 400 degrees for 20 minutes. Makes a dozen large muffins.
