APPLE WHEAT MUFFINS 
1 c. buttermilk, skim
2 c. Wheaties cereal
1 c. whole wheat flour
1/2 c. finely chopped pared apple (about 1/2 med.)
1/4 c. unsweetened apple juice
1/4 c. molasses
1/4 c. egg substitute
3/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon

Oven 400 degrees. Line 12 muffin cups with baking paper cups. Spray with non stick spray.

Pour buttermilk over cereal in medium bowl. Let stand 5 minutes or until cereal is soft. Stir in remaining ingredients all at once, just until flour is moistened. Fill cups 3/4 full.

Bake 20 minutes or until toothpick inserted in center comes out ALMOST clean. Immediately remove from pan.
