RICE AND BROCCOLI QUICHE 
3 c. hot cooked rice
1 1/2 c. (6 oz.) mild cheddar cheese
6 eggs
1 tsp. salt
1/2 c. onion, chopped
2 (10 oz.) pkgs. frozen chopped broccoli
1 c. chicken, chopped
1/2 c. milk
1/4 tsp. pepper
1 (4 oz.) can sliced mushrooms, drained

Combine rice, 3/4 cup of cheese, 2 eggs (slightly bean) and 1/2 teaspoon salt. Press firmly and evenly over bottom and sides of 2 greased 9" pie pans. Set aside.

Add onions and broccoli; and cook according to package directions. Drain well. Beat remaining eggs slightly. Stir in milk, pepper, mushrooms, chicken and remaining salt. Add to broccoli and mix well. Spoon into crust.

Bake at 350 degrees for 20 minutes. Sprinkle with remaining cheese. Bake 10 minutes longer. Cool a few minutes before cutting into wedges. Serves 6 to 8.

Ham sausage or turkey may be used instead of chicken.
