BROCCOLI-RICE QUICHE | |
1 1/2 c. cooked rice 3/4 c. egg substitute 3 oz. reduce fat shredded sharp Cheddar cheese, divided 1 c. cooked and well- drained frozen chopped broccoli 1/2 c. drained canned sliced mushrooms 3 tbsp. chopped onion 3 tbsp. skim milk 2 tbsp. grated Parmesan cheese 1/4 tsp. salt 1/8 tsp. pepper Preheat oven to 350 degrees. In a medium bowl, combine rice and 1/4 cup egg substitute and 1 ounce Cheddar cheese. Press mixture firmly over bottom and sides of a 8-inch pie pan sprayed with a non-stick cooking spray. Set aside. In a large bowl beat remaining egg substitute; add broccoli, mushrooms, onion, and milk. Stir in remaining Cheddar cheese, salt and pepper. Pour mixture into crust. Sprinkle Parmesan cheese over top. Bake 30 minutes or until knife comes out clean when inserted into center. |
