Have enough very small, firm, fresh zucchini and yellow summer squash to feed your family. Make a mixture of cornmeal and flour, mostly cornmeal, salt and pepper, like for frying okra; toss to coat well. Do this right before frying squash as it leaks a lot of moisture and will make fried squash soggy.
Have ready a large hot skillet with a small amount of oil. Put squash in skillet so as not to have layers, a single layer, not more than 2 are perfect. Let brown on bottom, turn to brown other side; season as you go. Let become nice and brown and crisp. Drain on paper towels. Serve very hot.
