SUMMER RICE SALAD 
2 med. tomatoes, chopped
1 sm. cucumber, chopped
2 green onions, chopped
3 c. cooked rice
1/2 to 3/4 c. Italian dressing

In medium bowl combine all ingredients using 1/2 cup dressing. Mix well. Cover and refrigerate. If desired when ready to serve add remaining 1/4 cup dressing.

1 cup uncooked rice equals 3 cups cooked rice.
