STEAMED ALMOND CARROTS 
Peel, then half, then quarter, then cut in 1 inch segments, 1-3 pounds carrots. Steam in vegetable steamer with 1-2 inches of water for 10-20 minutes. I like my carrots crisp, other prefer them very soft. Pour off water, toss in 1-2 tablespoons butter. Cover top with almonds, that have been toasted under broiler 1-5 minutes.

I know this sounds simple but the only thing I learned from my mother about vegetables is how to open the can.
