STEAMED BABY CARROTS 
16 baby carrots, scraped or frozen
1 tsp. soy or safflower butter
1/8 tsp. freshly grated nutmeg or dash of ground nutmeg

Steam the baby carrots in a saucepan with 1/4 inch of water until crisp-tender, about 4 minutes. Drain and toss with the butter and nutmeg. May also be prepared in the microwave. Serves 3-4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
