ARTICHOKE AND RICE SALAD 
1 pkg. (6 oz.) UNCLE BEN'S® Rice for Chicken
1 green onion, sliced thin
1/2 Bell pepper, chopped
12 pimiento stuffed olives, sliced
2 (6 oz.) jars marinated artichoke hearts, drained, sliced, reserving juice
3/4 tsp. curry powder
1/3 c. mayonnaise

Cook rice as directed on package. Cool and drain in large bowl. Add green onions, bell pepper, and olives. Drain artichoke hearts, reserving marinade. Combine curry powder and mayonnaise and whisk until smooth. Add artichoke hearts to rice salad, toss with dressing. Chill.
