ARTICHOKE RICE SALAD 
1 (6 oz.) pkg. drumstick Rice Mix or chicken flavored rice
1 (6 oz.) jar marinated artichoke hearts, drained and marinade reserved
4 green onions, sliced
1/2 c. chopped green pepper
1/2 c. mayonnaise
1/2 tsp. curry powder

Follow directions on rice package, omitting butter. Let cool. Slice artichoke hearts into chunks. Then add onions, olives and green pepper to cooled rice. Mix marinade with mayonnaise and curry powder. Stir into rice mixture. Refrigerate a day before serving. Keeps up to a week.
