IRISH SODA BREAD 
3 1/2 c. flour, unbleached
4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1/2 c. sugar
1/4 c. caraway seeds
1 c. golden raisins
1 egg, beaten
2 tsp. melted butter
1 1/2 c. buttermilk

First, combine the dry ingredients. In a separate bowl, mix the egg, melted butter, and buttermilk together, and then add to the dry ingredients, stirring a little at a time. Place in a greased loaf pan, heat the oven to 350 degrees and let stand for 20 minutes. Then bake for 45-60 minutes, until the top is a light, golden brown. Remove from the oven, cool in the pan for about 10 minutes (on a rack) then take the bread out of the pan. Let it cool off, then serve it warm (plain or with butter on top). This bread keeps well, is good toasted (or not) and freeze well. Irish soda bread goes great with a St. Patrick's Day dinner, or any morning with coffee, or as an afternoon snack with tea.
