ROAST WILD GOOSE 
1 wild goose, cleaned, about 6 lbs.
1 lg. apple
1 med. onion
2 strips bacon
1 can Campbell's chicken broth
1 tbsp. orange marmalade
2 oz. rose wine
Salt & pepper

Quarter apple and onion. Place in cavity of goose. Put goose in roaster. Add water to 1 1/4". Cut bacon into 4 pieces. Place over breast of goose. Bake goose in 375 degree oven for 25 minutes per pound. Roaster must be covered.

Remove roaster from oven. Uncover and let cool for 30 minutes. Remove goose. Place on carving board. Carve in 1/8" slices and place in baking dish. Add salt and pepper, 1 can chicken broth, 2 ounces red wine and 1 tablespoon orange marmalade. Cover with aluminum foil and place in refrigerator. Next day remove baking dish and let stand at room temperature for 20 minutes. Heat oven to 100 degrees. Place baking dish in oven. After 15 minutes, raise temperature to 350 degrees for 30 minutes. Remove and serve.
