GARBAGE DIP (PARTY) 
1 (15 oz.) can black beans, drained
1 (15 oz.) can whole kernel corn, drained (I use white corn)
1 (15 oz.) can black eyed peas, drained
2 cloves garlic, crushed
1 red onion, finely diced
1 green capsicum (pepper), finely diced
2 large tomatoes, finely diced
1 bunch fresh parsley, finely chopped
1 small red chili, finely chopped (optional)
2 tbsp. Italian dressing

Mix all ingredients together. Chill for a good hour before serving with salted crisps (chips) or sliced celery.

This recipe is courtesy of my American family and is a great favourite at parties. Nice thing with it is that you can use any of the tins of beans that you have in your cupboard that will look good mixed together. If you don't want that extra bite then skip the chili. Keeps refrigerated too!
