CORN MEAL PANCAKES 
1/2 c. cornmeal
1 tbsp. sugar
1 tsp. salt
1 c. boiling water
2 eggs, separated
1 c. flour
1 tsp. baking powder
1 c. milk
1/4 c. peanut oil

Combine cornmeal, sugar and salt in a pan; pour in boiling water while stirring. Cool. Beat in egg yolks. Sift flour and baking powder; stir in. Add milk and oil. Beat egg whites until stiff; fold into cornmeal mixture and cook cakes on griddle.

Best pancakes I ever had, so moist, retain heat better than normal, and not rubbery like what I've had lately. Just makes a lot of pancakes. Think I'll reduce it next time.
