POTATOES WITH CHICK PEAS 
4 med. potatoes, cooked in jackets, peeled and chopped
3 tomatoes, peeled and chopped
1 tbsp. olive oil
3 garlic cloves, chopped or minced
2 med. onions, chopped
1 1/2 c. chick peas, drained and rinsed
1/4 tsp. salt
Freshly ground pepper
1 1/2 tbsp. lemon juice
1 c. water

Warm olive oil in heavy skillet. Add garlic and onion. Cook, stirring until softened and translucent, about 5 minutes. Add tomatoes, cook 1 minute. Add potatoes, chick peas, salt, pepper, lemon juice, and 1 cup of water. Simmer for 15 minutes.
