CHICKEN PARMESAN 
3 whole skinless, boneless chicken breasts, halved
2 eggs, lightly beaten
1 c. seasoned flour (use salt, pepper & other herbs)
1 to 2 c. grated Parmesan cheese
3 tbsp. butter
1 onion, chopped
1 (32 oz.) jar Paul Newman's Own spaghetti sauce
2 c. grated Mozzarella cheese

Dip chicken breasts in egg, dredge in seasoned flour and roll in Parmesan, forcing cheese into all of the nooks and crannies.

Place chicken in frying pan with butter and brown on both sides (about 3 to 5 minutes a side). Remove and place in baking dish. Cover chicken with chopped onion, spaghetti sauce, Mozzarella and any leftover Parmesan. Bake at 350 degrees until brown on top, about 30 minutes. Serves 6.
