DOUBLE CHOCOLATE MUFFINS | |
![]() 2 c. all-purpose or pastry flour 1 c. unsweetened cocoa 1 c. sugar 1/2 tsp. salt 2 tsp. baking powder 1/2 tsp. baking soda 1 lg. egg or 2 egg yolks 1 c. whole milk 1/2 c. (salted) butter, melted 1 1/2 c. mini chocolate chips When making any kind of muffin, it's important not to over-mix the batter to keep them from becoming dry. Do most of the mixing before the flour is added. Then be careful not to over-bake. Preheat oven to 400°F. In a large bowl, combine flour, unsweetened cocoa, sugar, salt, baking powder and baking soda. In a medium bowl, whisk egg, milk and melted butter. Pour liquid ingredients into dry ingredients. Add chocolate chips and beat only until mixed (30 seconds). Fill greased and floured muffin cups 2/3 full with batter. Paper muffin liners are optional. Bake in preheated oven at 400°F about 20 minutes. Yield: 12 muffins Variations: Add 1/2 teaspoon each of rum or vanilla and/or Jamaican allspice. Add chocolate chunks or peanut butter chips.
