DOUBLE CHOCOLATE MUFFINS 
2 c. flour
3/4 c. cocoa powder
1 c. sugar
1 tbsp. baking powder
1 lg. egg
1 c. milk
1/2 c. "Shedd's Spread Country Crock"
1 1/2 c. mini chocolate chips

In large bowl combine flour, sugar, cocoa and baking powder. In medium bowl whisk egg, milk and melted spread. Pour liquid ingredients into dry. Add chocolate chips, stirring until mixed. Spoon batter evenly into 12 greased 2 inch muffin pans. Bake in preheated 400 degree oven for 20 minutes. (Cupcake liners may be used in place of greasing pans.)

I substituted the mini chocolate chip with pure dark chocolate chunks. And I also filled them with a cream cheese filling and they were a really big hit in the office. Thanks.
