GRANDMA'S CREAM POTATOES | |
6 or 7 med. size firm potatoes 2 med. onions 1/4 lb. butter 1/2 tsp. salt 1/4 tsp. pepper 1 tbsp. flour 1 1/4 c. heavy cream Pare, wash and cube potatoes. Peel, wash and chop onions. Fry in large skillet (iron skillet preferred) with 1/4 pound butter, 1/2 teaspoon salt and 1/4 teaspoon pepper on medium heat until browned on all sides. Reduce heat to a simmer. Sprinkle with 1 tablespoon flour. Fold in 1 1/4 cup heavy cream mixture. Will thicken as it is heated through. (Not for calorie counters.) Serves 6 to 8. |
