C.'S CHICKEN CASSEROLE 
4 chicken breasts, boneless
8 oz. broccoli, frozen
2 c. shredded cheese
1 stick butter
1 pack of Ritz crackers (can substitute low sodium crackers)
Salt & pepper to taste

Cook chicken breasts in a skillet with salt and pepper, takes about 4 minutes. Cool the chicken, about 5 minutes. Cut into cubes. In a skillet mix chicken, broccoli and 1 cup of cheese and simmer. Melt butter. Crush crackers in package, pour into butter. Mix well. Pour chicken mixture into casserole dish. Sprinkle with cheese. Top with crackers mixture. Bake at 350 degrees until golden brown.
