MISSISSIPPI MUD CAKE | |
4 eggs 2 c. sugar 2 sticks butter, melted 1 1/2 c. flour 1/3 c. cocoa 1 tsp. vanilla 1 c. coconut 1 to 2 c. nuts, chopped 1 sm. jar marshmallow creme Beat until thick the eggs and sugar. Then combine in a separate bowl the butter, flour, cocoa, vanilla, coconut and nuts. Mix these well and then add to the egg and sugar mixture. Pour into a greased and floured 13 x 9 inch pan. Bake at 350 degrees for 30 minutes. When you remove from the oven, immediately spread the marshmallow creme on the top of the hot cake. Then let this cool for a few minutes while you make the following icing. ICING: 1 stick butter, melted 6 tbsp. milk 1/3 c. cocoa 1 box powdered sugar 1 tsp. vanilla 1 to 2 c. nuts, chopped Melt butter and remove from heat. Then add all other ingredients into a bowl with the butter except the nuts. Mix these well then add the nuts. Stir in the nuts and then spread onto the cake. |
