CHOCOLATE ZUCCHINI CUPCAKES 
2 eggs
1 1/2 c. sugar
1/2 c. butter
1/2 c. corn oil
1/4 c. cocoa
1 tsp. baking soda
1 tsp. salt
1/2 c. buttermilk
2 3/4 c. flour
2 c. zucchini

Cream eggs, shortening and sugar. Place soda into buttermilk; add to creamed mixture with flour and zucchini, flavoring and salt. Bake at 325 degrees for 20-25 minutes.

FROSTING:

3 c. powdered sugar
3/4 c. cocoa
1/3 c. butter
2 tsp. vanilla
1/8 tsp. salt
5 tbsp. milk

Combine ingredients and frost cupcakes.
