POTATO CAKES 
Leftover mashed potatoes
1 egg
Salt
Pepper
2 or 3 tbsp. flour
Crisco and butter

Use leftover mashed potatoes. Add 1 egg, salt and pepper to your taste. You can tell if you need more flour by working everything in with a fork and form a ball to judge consistency. Fry in Crisco and butter slowly until brown on each side. Takes 20 minutes or more. Fat must chirp.
