SMOKER CHICKEN LEG QUARTERS | |
1 c. brown sugar 1 tbsp. coarse sea salt 1 1/2 tsp. black pepper 1 1/2 tsp. garlic powder 1 tsp. ground chipotle pepper 1 tsp. cayenne pepper olive oil 1 can lager 6-8 chicken leg quarters wood chips for smoker (I use apple wood) Place chicken in1or 2 pans to fit your smoker. Coat chicken with olive oil. Mix dry ingredients together and rub the mixture on chicken coating both sides. Let chicken set while preparing smoker. Lightly pour lager over chicken letting it pool in the pan. This will keep the chicken moist. Place uncovered pans in smoker and cook at 250°F for approximately four hours or until done. Meat thermometer should reach 165°F when done. This rub is also good for turkey and pork, just adjust cooking times. Submitted by: Donna L |
