ZUCCHINI OMELET 
5 eggs
1/2 c. oil
1/2 c. grated Italian cheese
1 onion, diced
Salt and pepper to your taste

Beat eggs in a bowl, add oil, cheese and onion, Bisquick, zucchini. Pour into a 9 x 3 x 9 inch pan (greased). Bake at 350 degrees for 40 to 45 minutes.
