VEGETABLE QUICHE 
6 mushrooms, sliced
1 onion, chopped
3 tbsp. bell pepper
1 c. cooked and chopped spinach
1/2 c. green beans, cooked
1/2 c. soy beans, cooked
2 tsp. tarragon
3 cloves garlic, crushed
3 eggs
1/2 c. milk
1/3 c. Parmesan cheese
1/2 c. sour cream
1 tbsp. sherry
Dash nutmeg

Saute all of 3 ingredients listed first. Add remaining ingredients. Mix thoroughly. Pour into a 9 inch pie crust. Cook 1 hour at 350 degrees. Add mushroom sauce to pour on top when served.

MUSHROOM SAUCE:

1 cup mushrooms cooked in 3 tablespoons butter. When cooked add 2 tablespoons flour, salt and pepper. Add 1 1/2 cups milk, cook until stiffen for sauce. Add 1/4 cup sherry. Pour over quiche when served.
