POTATO KUGEL 
4 eggs
8 med. Idaho potatoes
1 lg. onion, chopped
6 tbsp. bread crumbs or matzoh meal
1 1/2 tsp. baking powder
2 tsp. salt
1/2 tsp. pepper
1/4 c. melted butter

1. Preheat oven to 375 degrees.

2. Grate the potatoes and onion in a food processor or by hand. Pour into a large strainer and drain liquid.

3. Combine potato with remaining ingredients and stir thoroughly. Turn into a large greased casserole dish.

4. Bake in the oven for 35-45 minutes, until golden brown. Serves 8 to 10.
