THE BEST POTATO KUGEL | |
10 med. potatoes, peeled 4 lg. onions 4 eggs 1/2 c. matzo meal 1/2 c. peanut oil salt and pepper to taste In a food processor, finely mince 2 onions (you can use the large shredding disc. Fry the onions in hot oil until very brown, but not crispy. Grate potatoes using the same shredding disc. Grate 5 of the potatoes using the shredding disc. Set aside in a separate large bowl. Remove shredding disc and fit the food processor with the chopping blade. Add the 2 onions and puree (no need to clean food processor before adding onions!) Add the 5 potatoes, fried onions and matzo meal and pulse repeatedly until the potatoes are coarsely chopped. Add the eggs and pulse until combined. Combine contents of food processor with the grated potatoes in the bowl and mix well. Bake in large glass pan at 400°F for 45 minutes or until well browned. |
