MINESTRONE SOUP 
1 lb. beef chuck, cut into 1 inch cubes
1 tbsp. oil
1 (28 oz.) can tomatoes
3 c. water
1 tsp. salt
1 tsp. Italian seasoning
1 (10 oz.) pkg. frozen mixed vegetables
1 onion, chopped
1 (6 oz.) Pkg. spiral noodles, cooked and drained
Grated cheese

(I use a package of Italian Blend Vegetables.)

Brown meat in 1 tbsp. oil in Dutch oven. Add tomatoes, water and seasonings. Cover and simmer 1 hour. Add vegetables, onion and cook until vegetables are tender. Add cooked noodles. Sprinkle with grated cheese if desired. Makes about 8 servings.
