STUFFED CABBAGE CASSEROLE 
1 head green cabbage
2 lbs. ground chuck
1 med. onion, chopped
1/2 c. raw rice
2 cans tomato soup
Salt and pepper to taste

Cook rice according to package directions. Shred cabbage and put in bottom of 9 x 13 inch pan. Saute meat and add the onion, the cooked rice, the salt and pepper and one can of tomato soup. Spread this mixture on top of cabbage. Dilute the other can of tomato soup with 1/2 can of water. Pour over cabbage. cover with foil and bake for one hour at 350 degrees. 6 servings.

I love cabbage rolls but find them a bother to make, this tastes almost exactly like them but is so simple! And I simple it up even more by using a bag of the already shredded cabbage that they have for slaw. Sometimes it has carrots in it but that works, too!
