BAKED PUMPKIN 
2 beaten eggs
1 cup sugar, divided
1/3 cup all-purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon
1/4 tsp. vanilla extract
1 cup milk
4 tbsp. (1/2 stick) butter
2 cups pumpkin (or 15 oz. can)

Note: Make sure its the 100% pure pumpkin.

Preheat oven to hot (450°F). Melt butter in baking dish.

In a small bowl mix 1/3 of the sugar with 1 1/2 teaspoons cinnamon and set aside

Mix remaining ingredients together, pour into baking dish, sprinkle the top with cinnamon sugar mixture.

Bake at 450°F for about 25 to 30 minutes or until the center looks firm (not watery) and sides are baked and brown.
