SWEET POTATO AND CASHEW BAKE 
1/2 c. packed brown sugar
1/3 c. broken cashews (can substitute walnuts)
1/2 tsp. salt
1/4 tsp. ground ginger
2 lbs. sweet potatoes (5 or 6 med.), cooked, peeled, and cut crosswise into thick slices
1 (8 oz.) can peach slices, well drained
3 tbsp. butter

Combine sugar, nuts, salt and ginger. In a 10x6x2 baking dish layer half the potatoes, half the peaches, and half the sugar. Repeat the layers. Dot with butter. Bake, covered, at 350 degrees for 30 minutes. Uncover and bake about 10 more minutes. Spoon juice over potatoes before serving. Serves 6-8.
