AMBROSIA SWEET POTATO BAKE | |
6 or 7 c. sliced sweet potatoes, cooked or canned 1/2 lemon, sliced 1/2 orange, sliced 1 c. crushed pineapple 1/2 c. brown sugar 1/2 c. melted butter 1/2 tsp. salt 1/2 c. shredded coconut Maraschino cherries for garnish Alternate potatoes with lemon and orange slices in a buttered 11 1/2 x 7 1/2 x 1 1/2 inch baking dish. Combine pineapple, sugar, butter, and salt. Pour over all, sprinkle with coconut, and garnish with cherries. Bake 30 minutes at 350 degrees. Serves 8 to 10. |
