BANANA-NUT MUFFINS | |
2 1/4 c. oat bran 1 tbsp. baking powder 1/4 c. brown sugar 1/4 c. chopped walnuts 1 1/4 c. skim milk 2 very ripe bananas (riper the better) 2 egg whites 2 tbsp. vegetable oil Preheat oven 425 degrees. Mix oat bran, baking powder, sugar and nuts in large bowl. Mix the milk, bananas, egg whites and oil in a bowl or blender. Add to the dry ingredients and mix. Bake 17 minutes. Makes 18 muffins. |
